Ayam Percik is a staple dish at Ramadan bazaars in Kelantan, and the chef has decided to use New Zealand Lamb Ribs braised with chilli, shallot, galangal, and lemongrass. He then proceeded to chargrill it while basting it with Percik gravy, so the meal provides an explosion of flavours.
The Palumara Chicken (Ayam Palumara) is dish inspired by North Sulawesi. This classic meal from Makassar is usually braised; however, the chef has decided to not only braise the boneless chicken leg with several spices but also chargrill it and then baste the gravy to bring out the flavours.
