A Regional Showcase of Kelantan, Terengganu & Pahang at Permata Singapore

This season at Permata Singapore, embark on a refined journey through the culinary heritage

of Malaysia’s East Coast. Set within the stately halls of Gedung Kuning,

“Flavours of Pantai Timur” presents a curated halal buffet inspired by the traditional kitchens of Kelantan,

Terengganu, and Pahang—each bearing its own culinary rhythm and sense of place.

Thoughtfully composed by Chef Mel Dean, this limited-time experience brings together heritage

recipes, coastal influences, and kampung soul, executed with care and reverence

for authenticity.

A CULINARY PORTRAIT OF
EAST COAST 

Terengganu

Defined by its coastal abundance, Terengganu’s fare is shaped by simplicity and freshness.

Signature offerings such as Gulai Ikan, Acar Timur, Keropok Lekor, Boiled Egg, and the

delicately grilled Pulut Lepa represent the region’s clean, fragrant, and time-honoured

palate—where sea and land meet with grace.

 

Kelantan

The food of Kelantan is rich, bold, and grounded in deep tradition. At Permata, it takes form in

dishes like Laksam—rice flour rolls in creamy fish gravy; the herbaceous Nasi Goreng Ulam;

the smoky, spiced Ikan Percik; Budu Sambal, a pungent fermented anchovy dip; and crispy

Keropok Ikan. These are not just dishes but cultural imprints—each bite layered with story

and place.

Pahang

From the forested heart of Peninsular Malaysia, Pahang brings warmth and depth to the table.

Look for slow-cooked treasures such as Daging Masak Hitam, the earthy heat of Ayam

Goreng Berempah, and the distinctive richness of Udang Lemak Tempoyak—prawns

simmered in fermented durian curry. Together with Sambal Tempoyak, this is food that holds

both comfort and power in equal measure.

MORE THAN A MEAL

“Flavours of Pantai Timur” is not an event—it is a conversation with heritage. Presented in a

space once reserved for royalty, this buffet is an homage to traditions that are rarely seen

together in one setting, and even more rarely, this respectfully prepared.

Through taste, aroma, and memory, it offers an opportunity to witness three culinary landscapes

converge with dignity and care.
