Flavours of the East Coast: A Culinary Journey at Permata Singapore

From 1 September to 31 October 2026, Permata Singapore invites diners to travel through the flavours of Kelantan, Terengganu and Pahang without leaving Gedung Kuning. Flavours of the East Coast is a 1-for-1 halal buffet inspired by the coastal communities, home cooks and royal kitchens of Peninsular Malaysia’s East Coast.
The menu is a celebration of regional character. Kelantan brings bold, aromatic dishes; Terengganu contributes its celebrated seafood traditions; and Pahang appears through distinctive tempoyak creations and rustic countryside flavours. This regional variety reflects the wider story of Malay food heritage, which has been shaped by local ingredients, cooking practices and influences from many cultures. 1
Begin with the coast
At the Kota Laksmana Seafood & Salad Station, start with prawn, mussel, clam and smoked salmon on ice. Pair them with Thai coriander sauce, Sriracha mayo or torch ginger dressing, then add Colek Buah Kelate, Kerabu Mangga or potato salad for freshness.
The Pembuka Selera Appetizer Station brings together Mini Chicken Burger, Bruschetta Tomato Daun Selasih, Roti Kirai & Potato Curry, Cucur Bawang, Lempeng Kelapa, Basil Mushroom Frittata and potato wedges. Sambal Ikan Bilis and Thai sweet chilli add extra depth.
Taste East Coast traditions
The Warisan Pantai Timur Hearty Dishes Station is where the journey becomes especially distinctive. Try Nasi Dagang with Gulai Ikan, egg and Acar Jelatah; Nasi Kerabu Goreng with Solok Lada Relish and Budu; Daging Masak Hitam; Ayam Tempoyak Daun Kesum; Kupang Goreng Berlada and Keropok Lekor. An ulam selection of cucumber, cherry tomato, tempe and tofu brings a fresh contrast.
For the fullest experience, take the buffet in stages. Begin with seafood and salads, move to the East Coast rice and hearty dishes, then explore the sambals and DIY stations. At dinner, return to the grill for satay or seafood before finishing with a selection of traditional sweets. This slower pace lets each station contribute something different to the meal.
For deeper exploration, sample the Aneka Sambal selection, including Sambal Belacan, Sambal Geprek, Sambal Tumis, Sambal Hijau, Sambal Tempoyak and Sambal Kicap. Dinner brings the grill
The Medan Bakar Nila Utama Grill Station opens for dinner only, not lunch. Choose from Chicken Satay, Mutton Satay, Char-grilled Striploin, Udang Bakar Tempoyak, Sata Barramundi Bakar and Ayam Percik Kelantan, with Budu Air Asam, Sambal Geprek, Lemak Cili Api Sauce and Sambal Cabe Ijo.
Finish at the Sulaman Madu Dessert Station with Cek Mek Molek, assorted Nusantara kueh, Kuih Akok Bread Pudding, Pulut Hitam, Serawa Durian, Lompat Tikam Verrine, Kole Kole Temasek and Sagu Pengat Pisang. Vegetarian items are marked on the menu, and some food items may be substituted with an equivalent if unavailable.
Plan your visit
The lunch buffet runs Monday to Sunday, 12:00 pm–2:30 pm, at $88++ for two adults. Dinner runs Sunday to Friday, 6:00 pm–9:30 pm.
