My art is about sound. The hum of the city, the whisper of the wind, the cacophony of a
crowded hawker centre. I am a collector of sounds, a composer of urban symphonies. And one of my favourite sounds in the whole city? The sizzle of a perfectly cooked steak. It’s a sound of anticipation, of satisfaction, of pure, unadulterated pleasure. It’s a sound that I’ve been chasing all over the city, and my latest quest has been to find the perfect halal version of this beautiful music.
The search for a great halal steakhouse is a journey into the heart of the halal food meaning. It is about taking a food that is so often associated with a certain kind of Western, non-halal
dining culture, and reclaiming it, reinterpreting it, making it our own. It is a powerful statement of culinary confidence, a declaration that halal food can be anything it wants to be: sophisticated, modern, and utterly delicious.
My quest led me to a place that was a temple of meat. The decor was minimalist, the lighting was moody, and the air was thick with the intoxicating aroma of grilled beef.
