Signatures of the Season

This Ramadan, Permata Singapore presents six signature creations that honour the rich flavours of the Malay Archipelago. Guided by Chef Mel Dean, each dish blends tradition, warmth, and the soulful spirit of Nusantara cuisine

Rawon Risotto

A soulful fusion of East Javanese rawon and creamy risotto, slow-braised beef in keluak broth delivers bold, comforting flavours.

Mee Wak Katok

A nostalgic tribute to 1970s Singapore street food, Mee Wak Katok features springy noodles wok-fried with garlic, fiery sambal, and tender beef.

Bubur Lambuk Permata

A timeless Ramadan classic, Bubur Lambuk is slow-simmered with fragrant spices and herbs for a comforting, nourishing bowl of warmth and togetherness.

Punten & Cabe Ijo

A cherished Kelantan classic, Laksam pairs soft rice noodles with a silky, coconut-rich gravy for a light yet deeply comforting bite.

Mee Siam Mamak

An Indian Muslim twist on Mee Siam, this version features rice vermicelli in a rich, aromatic coconut-curry gravy with a perfect balance of sweet, sour, spicy, and creamy flavours.

Ayam Percik Kelantan
