This festive buffet brings a special touch to every gathering, featuring heritage-inspired dishes, seasonal creations, and Chef Mel Dean’s innovative interpretations of beloved Nusantara flavours. Each dish is thoughtfully prepared to honour the joy of sharing — perfect for family reunions, year-end feasts, and meaningful celebrations.

Signatures of the Season
This month, Permata Singapore presents six signature creations that celebrate the vibrant flavors of the Malay Archipelago. Guided by Chef Mel Dean, each dish blends tradition, creativity, and the soulful spirit of Nusantara cuisine.








Nasi Lemak Pandan Sticky Rice
Fragrant pandan-infused glutinous rice filled with sambal anchovies, egg, and peanuts, offering a comforting bite of nostalgia.
Torch Ginger & Calamansi Capers Fish
Barramundi infused with calamansi and torch ginger for a bright, citrusy and aromatic finish.
Farmer’s Market Veggie Enchiladas
Tortillas filled with spiced vegetables and cheese, baked until golden and served with Cabe Ijo for a touch of heat.
Nyonya Tamarind Grill Prawn
